Instructions

Main Batter
  • Heat the oven to 225 °C.
  • Mix flour and sugar in a bowl. Mix in butter (in pieces) until a gritty texture is formed.
Filling
  • Peel, deseed and slice the apples into thin slices, and mix them with sugar and cinnamon in an ovenproof dish. Spread the butter mixture over the filling.
  • Bake in the middle of the oven for 15–20 minutes.
Classic custard
  • Cut the vanilla pod lengthwise and scrape the seeds into a saucepan. Add the vanilla pod. Add milk and ​​1 cup (250ml) of cream. Cook on a medium heat. Take off the heat and leave for 10–15 minutes.
  • Pick out the vanilla pod.
  • Beat egg yolks, sugar, and potato flour. Heat the sauce to medium heat while stirring until it begins to thicken.
  • Pour the sauce into a bowl and whisk it cold.
  • Add in the rest of the cream, stirring it into the cold custard.
