Low Calorie Healthy Creamy Chicken

Method
  • Start with beating the chicken breast with a rolling pin or mallet to flatten out (if you’re using two plumped chicken breasts, cut them into four).
  • Place the chicken in a bowl and season with the dried parsley, oregano, salt and pepper and set aside.
  • Drizzle olive oil in a medium pan and place over a medium heat, gently cook the garlic for one minute, then increase the heat and place the chicken breasts in two at a time.
  • Cook each side for 3-5 minutes until crispy and the chicken is cooked all the way through.
  • Repeat with the other two chicken breasts and when cooked, remove and set aside.
  • Pour the Arla B.O.B skimmed milk into the same pan to make use of all those lovely juices. Then, mix in the garlic paste, parsley, chilli flakes and a bit more salt and pepper. Simmer.
  • Remove a few spoons of the milk mixture into a cup, add the tsp of cornflour and stir to combine well until there are no lumps before pouring the thick paste back into the creamy mixture.
  • Stir well to combine and continue to cook until the sauce has thickened.
  • Place the chicken breast back into the cream and cook for a further minute to warm back through.
  • Garnish with some fresh parsley and spring onions, and serve over rice, pasta or whatever you like. Enjoy!
