Instructions

  • Peel the asparagus and trim off the woody ends. Peel the potatoes and cut them into quarters.
  • Boil the potatoes in salted water for about 15 minutes until tender.
  • In a separate pot, cook the asparagus in plenty of water with a pinch of sugar for about ​10 minutes until slightly firm to the bite.

Hollandaise sauce

  • Melt butter over low heat.
  • In a metal bowl, whisk egg yolks with lemon juice and water over a hot (but not boiling) water bath until the mixture thickens slightly. Remove the bowl from the heat and slowly whisk in the melted butter, stirring continuously.
  • Season with salt and white pepper.
  • Briefly rinse the asparagus under cold water, then serve it with the potatoes, cooked ham, and warm hollandaise sauce. ​Once plated, scatter the chopped chives over the sauce.
