Instructions

Pork roast
  • If you use a kettle BBQ, fill a BBQ starter with approx. 35 briquettes and light it up. Distribute hot briquettes on each side of the BBQ – for indirect heat. The top and bottom dampers must be open. Place the foil tray in the centre. If you use a gas BBQ, turn on the burners on the sides to roast at indirect heat. Allow the BBQ to heat up, and then place the foil tray in the centre.
  • Check if the crackling of the pork roast is scored all the way through. If needed, check with a sharp knife, especially the sides. Make sure not to cut all the way down into the meat. Rub salt between all the cracklings. Place the roast on the rack with the crackling facing up and close the BBQ lid.
  • Cook the pork roast for approx. 1 hour until the centre temperature is approx. 65°. If the crackling is not crispy, you can cut it off and grill it over direct heat – keep an eye on the crackling and keep the meat warm while doing so. If the crackling is close to crispy, simply turn the roast over, crackling side down, and cook for a few minutes over direct heat.
Salad
  • Cut the stem off the broccoli and remove the woody base. Cut the stem into thin sticks and the rest of the broccoli into florets. Place broccoli and sweet peas in a bowl and pour boiling water over them. Leave to soak for about 1 minute, then pour them into a colander and pour cold water over them. Split the sweet peas.
  • Mix lime juice, honey, soy sauce, fish sauce, ginger, sesame oil and salt in a bowl. Toss broccoli, sweet peas, plums, and onion in the dressing and let it sit on the worktop for about 15 minutes.
  • Toss in the salad leaves and coriander just before serving.

  • Cut pork roast into slices and plate with salad, Greek yoghurt, and warm naan bread.

If you have the time, consider letting the roast rest. 10-15 minutes is enough to minimise the amount of steam that might soften the crackling. Cover loosely with foil, leaving the sides open to let the steam escape, and making sure it does not touch the crackling. 10-15 minutes is sufficient to make the juices redistribute without softening the crackling.
