Instructions

Risotto base

  • Melt butter in a thick-bottomed saucepan over high heat without browning. Sauté onion, rice, and garlic for about 1½ minutes. 
  • Add vegetable stock and bring to a boil. 
  • Cook over a steady heat and without a lid for about 15 minutes, stirring occasionally.

Chicken

  • Heat a grill pan well. Grill chicken fillets for about 1 minute on each side, then cook over low heat for about 10 minutes, turning occasionally. 
  • Sprinkle the chicken fillets with salt and pepper, remove, and keep warm.

Assembly

  • Mash white cheese cubes and fold them into the risotto, along with peas, cranberries, salt, and pepper. Season to taste.
  • Arrange the risotto on a platter, garnish with parsley and serve with the grilled chicken.
