Coconut Parfait with Mint

The freshness of the coconut works well with the sweetness of the parfait.

Ingredients

Coconut flakes
60 g
Egg yolks
2
Icing sugar
80 g
Chopped fresh mint
2 tsp
Coconut milk
100 ml
Whipped cream
250 ml

Instructions

Step 1

  • Roast the coconut in a dry hot pan until it turns light brown - keep aside.

Step 2

  • Mix the egg yolks with the icing sugar. Add the mint and the coconut milk.

Step 3

  • Whip the cream. Stir in the cream and coconut into the egg mixture.

Step 4

  • Pour into an oblong dish and cover with cling film. Freeze for at least 4 hours.

Step 5

  • Take out the coconut parfait and leave in the fridge for approximately 30 minutes before serving.

Step 6

  • Place the parfait on a cutting board. Cut it into slices and then into diagonal pieces and serve.
