Tips

You can either boil the potatoes or prepare the whole potato salad the day before it is to be served. It saves time and allows the potatoes to soak up all the flavours from the dressing, making it even more delicious. You can also save time by preparing it in advance, so it is ready for the next day.

Tips

If you are wondering what to do with leftover potato salad, we have got you covered. Put the leftovers to good use and add them as a topping for tacos or baked potatoes. You can also use the cold potato salad as a filling for sandwiches by simply adding some lettuce, pickles, and onions. Flavourful herb and mustard dressing

Our creamy dish is dressed with a flavourful dressing made from sour cream, herbs, and mustard. Putting mustard in potato salad adds a pleasant tangy taste and pairs wonderfully with the luscious and tangy sour cream. A burst of citrus from freshly squeezed lemon juice and a few sprinkles of chives and parsley provide the dressing with a bright and fresh flavour and a peppery finish. It is a refreshing addition to an otherwise decadent, hearty dish.

Choosing the right potatoes

When choosing potatoes for cold potato salad, it is important to pick a type that can hold its shape without ending up with a mash-like consistency when cooked and mixed with the dressing. They should be small and waxy with thin skin like new potatoes, fingerlings, and red potatoes.

New potatoes have a crisp, waxy texture with thin, wispy skin and keep their shape once cooked and sliced. Compared to other varieties, these potatoes have a sweeter flavour as their sugar has not converted to starch yet, making them perfectly suited for this recipe.

Red potatoes are generally small to medium in size with a round or oval shape. Their thin skin is ruby to deep red with some light brown spots. Once cooked, they have a waxy, dense texture with a mild, buttery, almost sweet flavour.

Finally, fingerlings are small, stubby finger-shaped potatoes with very thin and tender skin. They have a quite distinct flavour that is nutty or earthy with a mild, buttery taste.

How to serve potato salad

Cold potato salad is an irresistible and versatile side dish you can serve with loads of tasty meals. Pair it with sweet, savoury, juicy barbecue ribs or grilled bratwurst for a summer serving. For a winter take, prepare a baked ham to go along with the salad. The combination of the creamy salad with the distinct sweet and smoky flavour of the ham forms a delicious and hearty meal that is bound to make your mouth water. If you like seafood, you can also serve the cold potato salad with grilled salmon, trout, or shrimp.

Experiment with the ingredients

This recipe allows you to be creative with different flavours and add-ins. For a spicy kick with a little heat, add 1-2 tablespoons of sriracha sauce and a bit of honey to balance the spiciness. If you do not have sriracha sauce, jalapenos and cayenne are great alternatives to kick up the heat.

Go all in with fresh herbs like coriander and mint leaves. Coriander has a pleasing combination of flavours that resembles parsley and citrus. With a warm, spicy aroma and a hint of citrus, coriander makes a great addition to the spicy version of this dish. In contrast, fresh mint leaves offer a sweet, cooling flavour with a slight bitterness that will brighten up the cold potato salad.
