Instructions

  • Using a peeler or mandolin, thinly slice cucumbers lengthwise and place them on a piece of kitchen paper.
  • Crumble white cheese into a bowl. Pit olives and chop them finely. Cut open the chilli pepper, remove the seeds, and chop into small pieces. Remove the leaves from the mint stalks and chop the leaves very finely.
  • Squeeze the lemon and set the juice aside (approximately 15 ml). Add olives, chilli pepper, Greek yoghurt, mint, and lemon juice to the cheese and toss everything together. Season with black pepper.
  • Place a heaped teaspoon of the filling on the end of each cucumber slice, roll up the slice and secure it with a toothpick. Refrigerate the rolls for 1-2 hours and serve.
