Instructions

Kadayif base

  • Melt butter in a pan over medium heat and fry the kadayif dough for about 10 minutes or until golden and crispy.
  • Transfer it to a bowl and mix with the pistachio cream and tahini.
  • Secure a piece of baking paper between the ring and base of a springform tin (about 22 cm in diameter) and line the sides with cake collar plastic.
  • Press the kadayif mixture into the bottom of the springform in an even layer.
  • Refrigerate for about 10 minutes to set.

Cream cheese filling

  • Combine cream cheese, double cream, vanilla, icing sugar, lemon zest, and lemon juice in a large bowl. Whip until thick and creamy.
  • Spread the filling evenly over the chilled kadayif base.
  • Cover and refrigerate for at least 4 hours, preferably longer.

Chocolate ganache

  • Finely chop the chocolate and place it in a bowl.
  • Heat the double cream until just below boiling, then pour it over the chocolate. Let it sit for 2 minutes without stirring.
