We have a new favourite way to enjoy falafel. This vibrant Middle Eastern-inspired salad combines crispy falafel, crunchy vegetables, and a creamy, tangy dressing. It is very easy to make, giving you a quick lunch and dinner option. Once you have tried it, do not be surprised if this falafel salad recipe becomes a regular in your weekly rotation.

Ingredients

Falafel

Chickpeas (400 g)

Lemon juice, freshly squeezed

Vegetables

Red onion

Instructions

Falafel

  • Rinse the chickpeas thoroughly in a strainer and drain well.
  • Place the chickpeas, onion, garlic, ground cumin, chilli powder, ground coriander, paprika, cardamom, salt, baking powder, and 2 tablespoons of flour into a food processor fitted with a knife blade.
  • Pulse the mixture until smooth. If the mixture feels too wet, add a little more flour, one tablespoon at a time, until the consistency is right.
  • Divide the mixture into 10 equal portions. Shape each into a ball about the size of a golf ball and flatten them slightly.
  • Heat a generous amount of oil in a frying pan over medium heat. Fry the falafels until golden and crisp on one side, then carefully flip them to cook the other side until golden. They should be crispy on the outside and soft on the inside.

Dressing

  • Mash the white cheese with a fork.
  • Combine the mashed cheese with Greek yoghurt, tahini, freshly squeezed lemon juice, and a pinch of chilli powder. Stir until the dressing is creamy and uniform.

Vegetables

  • Chop the red onions, spring onions, and fresh red chillies.
  • Halve or quarter the cherry tomatoes, depending on their size.
  • Rinse the rocket thoroughly under cold water and pat it dry with a clean kitchen towel.
  • Arrange the rocket on a serving platter, then evenly scatter the chopped vegetables on top. Place the freshly cooked falafel on top of the prepared salad.
  • Add a dollop of the creamy dressing on top of the falafel. Serve immediately and enjoy!
