Instructions

  • Preheat the oven to 150 °C.
  • Wash and cut potatoes into centimetre-sized pieces. Slice spring onions.
  • Heat butter & rapeseed oil in an oven-safe frying pan.
  • Add potatoes and fry for about 7 minutes on medium heat, stirring occasionally for even cooking. Season with salt and pepper. Add spring onions towards the end.
  • Grate cheese and place it in a bowl. Whisk in eggs and soured cream. Pour the egg mixture over the potatoes and stir.
  • Place the frying pan in the middle of the oven and bake for about 15 minutes. Let it cool.
Topping
  • Chop red onion finely and cut lemon into wedges.
  • Top your frittata with roe, crème fraiche, and red onion. Serve with lemon.
