Gingerbread

Gingerbread dough is easy to make yourself, and much better than pre-made! Plan baking the gingerbread in advance as the dough needs a day to rest before baking.

Ingredients

Butter
200 g
Dark syrup
150 ml
Caster sugar
240 g
Whipped cream
150 ml
Ground ginger
1 tbsp
Ground cinnamon
1 tbsp
Ground cloves
½ tbsp
Ground cardamom
½ tbsp
Baking soda
1 tbsp
Wheat flour
600 g

Instructions

Step 1

  • Place butter, syrup and sugar in a saucepan. Heat until everything has melted.

Step 2

  • Pour the mixture into a mixing bowl, add the cream and spices, then stir.

Step 3

  • Stir the bicarbonate and flour in the mixing bowl. Work the dough together, it will be quite loose. Let it rest in the fridge for about a day and bring it out 1 hour before baking.

Step 4

  • Heat the oven to 175 °C.

Step 5

  • Roll out the dough thinly between 2 sheets of baking paper. Put the baking paper on a baking tray and cut out the gingerbread cookies. Pull away excess dough and roll out again.

Step 6

  • Bake in the middle of the oven for about 7 minutes and allow to cool on a plate.
