Instructions

  • Preheat the oven to 175 °C.
  • Mix the sugar, butter and salt well. Stir in the treacle and eggs.
  • Mix the oats, flour and baking powder together and add the spices. Fold it into the butter mixture. Add the cranberries and almonds.
  • Divide the dough into 16 pieces and shape them into balls. Place the balls on 2 sheets of baking paper – lightly press them flat. The dough will spread out a bit, so make sure there is plenty of space between them.

  • Serve and enjoy!
Enjoy!
Tip

Level up your granola cookies’ chewy-crunchy texture by choosing coarse rolled oats for structure and bite. Chop your nuts into different sizes for extra texture, giving your cookies a crunch that contrasts with the chewy oats.

Tip

For the best taste, let your granola cookie dough rest in the fridge for 24 hours before baking. This infuses the spices into the dough and allows the oats to soak up moisture, creating a cookie that packs the most flavour. If you're short on time, a quick 10-minute chill in the freezer can also improve the dough's texture and make it easier to shape into balls for baking.

Questions about granola cookies

Whether you're a bake-off master or making these treats for the first time, our frequently asked questions will guide you through the steps of making the perfect granola cookies.

What's the best way to store granola cookies?
For fresh granola cookies, store them in an airtight container at room temperature, shielded from sunlight. This keeps them fresh for about five days. Remember that the cookies can soften a bit, resulting in a chewier texture. For longer storage, freeze the cookies in a container that's safe for the freezer. This can keep them relatively fresh for up to three months. Thaw them on your countertop for around an hour before serving for the best results.
Can I freeze the dough for later use?
Absolutely! Granola cookie dough is perfect for freezing, meaning you can save any leftovers to bake again later. Simply roll the dough into balls and arrange them on a sheet of baking paper. After they harden, put them in a bag or container that's safe for the freezer. When it's time to bake, place the frozen dough on a baking tray lined with parchment paper and bake them a bit longer than usual to get the best results.
What other ingredients can I mix into the dough?
Chocolate chips, various dried fruits, or other nuts like pecans, pistachios, or walnuts are all great mix-ins for your granola cookie dough. Seeds such as pumpkin, sunflower of flax seeds provide both texture and a subtle new flavour. You can also experiment with shredded coconut, or even finely grated carrots or zucchini to introduce interesting textures and flavours. Our recipe is flexible, so feel free to experiment!

Use just the right amount of spices

Measuring your spices with precision is crucial to give your granola cookies the right taste. Too much cardamom, cinnamon, or ginger will dominate other flavours, making your baked goods overwhelmingly spicy. Use measuring spoons and carefully measure each spice to ensure each cookie batch has a consistent, aromatic taste.

Monitor baking time for perfect chewiness

To get the right chewy texture, keep a close eye on the oven as your cookies near the 10-minute mark. If you see the edges turning a light brown and the cookie feels set but still soft in the middle, then it's time to take them out. Let them rest on the baking tray for a few minutes to develop that sought-after chewiness, then move them to a wire rack to cool down. This attention to timing ensures each batch of granola cookies is as enjoyable as the last.

Can I make these granola cookies without gluten?

Sure! For this recipe, simply swap out wheat flour with gluten-free all-purpose flour. You may need to tweak the flour amount to achieve the right texture since gluten-free flour can behave differently from wheat flour. Also make sure to choose oats that are certified gluten free to prevent cross-contamination.

Ingredient synergy for flavourful cookies

Making the perfect granola cookies involves a thoughtful blend of ingredients. The foundation is a trio of warm spices: cardamom, cinnamon, and ginger. Each brings a unique flavour that enriches the aroma and complements the oats' natural taste. Treacle's sweetness combines with the tangy dried cranberries for a delightful contrast. Coarse salt plays an important role too; it cuts the sweetness and brings out the full range of flavours, achieving a well-balanced cookie.

Choosing the right oats matters; coarse rolled oats give a hearty texture and soak up the flavours, forming the cookie's base. They mix well with the creamy butter, creating a satisfying bite with a complex blend of textures. Chopped almonds add a crunch that contrasts with the soft oats and cranberries, enhancing the sensory experience.

Mixed carefully, they work together to turn a simple snack into a gourmet treat. Each ingredient is key, making the granola cookie a celebration of simple beauty and the power of combining the right elements in baking.

Extra techniques for standout granola cookies

Baking standout granola cookies involves more than just following a recipe; it's about using preparation methods that bring out the best in flavour and texture. Start by blooming your spices – cardamom, cinnamon, and ginger – in softened butter. This warms the spices, releasing their oils and infusing the butter with deep, rich flavours. Your cookies will taste more aromatic and have a complex spice profile.

Letting your cookie dough rest before baking is also crucial. This pause allows the oats to soak up moisture, improving their texture and letting the flavours blend well. The result is cookies with a distinct, full taste from the first bite. This resting technique affects texture too. Dough that has had time to rest spreads evenly in the oven, creating cookies with a consistent shape and the perfect mix of crispy edges and a soft, chewy middle. If you're pressed for time, even a short chill in the refrigerator or freezer can help.

Incorporating these smart preparation steps into your baking process not only refines the cookies' flavour and texture but also boosts your baking expertise.

Make your granola cookies less sweet

To reduce the sweetness, consider adjusting the amount of sugar used in the recipe. Instead of using the full amount, you can decrease it by half or even more, depending on your taste preference. Alternatively, you can opt for natural sweeteners like honey or maple syrup, which lend a subtle sweetness without overpowering the cookie's flavour.

Incorporating other ingredients such as unsweetened shredded coconut or more chopped nuts can add texture and depth to the cookies without contributing extra sweetness. Experimenting with these adjustments allows you to tailor your snack to the desired level of sweetness while still maintaining their deliciously wholesome appeal.

What else can I use my granola cookies for?

Your granola cookies can serve as a versatile treat beyond just a simple snack. Consider crumbling them over yogurt for a delightful crunch and added flavour. They can also be used as a base for our skyr cheesecake by pressing them into a pan, baking and then, once cooled, layering the skyr mouse on top.

For a unique twist, sandwich a scoop of your favourite ice cream between two cookies to create delicious homemade ice cream sandwiches – our banana nice cream or mango nice cream make for an especially delicious pairing.

Another option is to crumble and sprinkle them over oatmeal or berry fruit salads for an extra boost of flavour. With their hearty texture, your granola cookies are a quick and easy way to elevate a variety of dishes and snacks from good to extraordinary.

Create your signature spice mix

Crafting your signature spice mix allows you to infuse your granola cookies with a unique and personalised flavour profile. Start by experimenting with a variety of spices such as cinnamon, nutmeg, ginger, and cloves to create a balanced blend that complements the natural sweetness of the cookies.

You can also incorporate ingredients like vanilla extract, orange zest, or even a pinch of sea salt to enhance the complexity. Adjust the quantities of each spice to suit your taste preferences, aiming for a harmonious combination that adds depth and warmth to every bite. Once you've perfected your spice mix, store it in an airtight container and use it whenever you bake your granola cookies to impart a touch of your own culinary flair.
