Selecting high-quality lamb

Always check for freshness when buying lamb; the meat should be pinkish-red with firm, white fat, and it should smell fresh rather than gamey or sour. Roast the lamb ahead of time
Season the lamb generously with salt, pepper, ground cumin, and dried rosemary. Preheat the oven to 160 °C. Place the meat in a roasting pan, adding a few cloves of garlic and some olive oil.
