Instructions

Sushi rice
  • Put rice in a large bowl and rinse gently with several runs of cold water until the water remains clear. Drain the rice in a sieve.
  • Put them in a thick-bottomed pot and pour water on. Let the rice soak in the water for 30 minutes.
  • Bring the rice to a boil, then cook over low heat under a lid for 10–12 minutes until the rice is tender. Remove the pan from the heat and leave the rice covered for about 15 minutes.
  • Remove the lid and allow the rice to cool quickly.
  • Dissolve sugar and salt in vinegar and stir the vinegar mixture into the rice. Arrange rice in a flat dish or similar.
  • Place 1 nori sheet with the shiny side down on the bamboo mat.
  • Dip a measuring cup in cold water and place 100 ml of rice on the seaweed.
  • Dip your fingers in the water and spread the rice in one layer on the seaweed plate − leave 1 cm free at the top.
With raw salmon
  • Place salmon and cucumber close to the lower part of the nori sheet, and then roll the sheet tightly together using the bamboo mat.
  • Moisten the top cm of the seaweed plate with water and close the roll.
  • Place it on a cutting board and cut the roll into at least 6 sushi pieces. Place the pieces on a dish or plate on the rolls’ cutting surface.
  • Make 2 more rolls and arrange the pieces on platters or plates.
With raw tuna
  • Make 3 rolls with raw tuna and carrots and arrange the pieces.
With raw turbot
  • Make 3 rolls with raw turbot and green asparagus and arrange the pieces.
To serve
  • Place the maki sushi covered in the fridge until serving. Serve with wasabi, ginger, salmon roe, and soy sauce.

For safe and delicious maki sushi, use sushi-grade fish. This undergoes careful handling and processing to cut the risk of foodborne illnesses, especially important for raw dishes. Sushi-grade fish is the safest choice and enhances your maki sushi’s flavour and texture, giving you a homemade sushi experience that matches the professional quality.

Although not as safe as buying sushi-grade fish, you can freeze regular raw fish for 24 hours. After a minimum of 24 hours, thaw it in the fridge, preferably overnight, and use it raw in your maki rolls. This is a common method to kill parasites and ensure it is safe for raw consumption, although it may not eliminate all potential risks associated with eating raw fish. If you choose to use home-frozen fish, ensure it is handled and stored properly to minimise any potential health risks.

Use a bamboo mat

To achieve a tight sushi roll, you need a bamboo mat. You can cover it in cling film if you are making uramaki or if you want to prevent rice from sticking and help form a clean roll. For maki rolls with seaweed on the outside, a mat without cling film works well, too. When you are ready to roll, lift the edge of the mat closest to you and begin rolling away from you, applying gentle but firm pressure to keep the roll tight. Continue rolling until the sushi is fully enclosed, then gently press the mat around the roll to shape and compact it.
