Ingredients

4 servings
Floury potatoes
1 kilo
Milk
200 ml
Salt
1 tsp
Black pepper to taste

Instructions

  • Peel the potatoes and cut them into pieces. Cook until soft in lightly salted water for around 20 minutes, until they are easily pierced.
  • Drain the water and press the potatoes through a puree press or mash with a potato masher directly in the pan.
  • Heat the milk and cream and stir into the potatoes. Season with salt and pepper and lightly stir.

But it wasn’t until the second half of the 18th century that a French army pharmacist, Antoine-Augustin Parmentier, started a campaign to convince people that potatoes are fit for human consumption and not only as animal feed. Mashing the potatoes was one method that Parmentier recommended. Potatoes mashed with milk and butter are found in recipe books from the 18th century and onwards.
