Mighty Meatballs

Our meatballs are truly mighty! Jam packed with vegetable goodness to fuel your little big kids. Serve with a glass of Arla Big Milk so you know they are getting all their sneaky vitamin goodness too!

Instructions

Step 1
  • Pre-heat oven to gas 6, 200°C, fan 180°C. Mix all meatball ingredients bar the olive oil in a bowl and season well.
Step 2
  • Pinch away a bit of the meat mixture and roll in your hands to form a ball (roughly the size of a golf ball). Keep repeating and set all meatballs aside on a lined baking tray. Pop in the fridge whilst you make the sauce.
Step 3
  • Heat the oil in a large, deep pan over a medium heat. Add the onion and fry for a few mins. Add the garlic and fry for a further minute.
Step 4
  • Add the celery, carrots, red peppers and aubergine and fry for a few mins. Add the tinned tomatoes, cauliflower, Italian herbs, Worcester sauce and beef stock and bring to the boil.
Step 5
  • Reduce the heat and simmer for 15 mins. Remove from the heat and blitz with a hand blitzer until smooth.
Step 6
  • Add 1 tbsp of oil to a large, oven-proof pan on a medium-high heat and brown the meatballs in batches. Once all are browned add back to the same pan.
Step 7
  • Pour in the hidden veg sauce, and nestle the mozzarella in-amongst. Bake in the oven for 30 mins and enjoy a mighty veg-packed dinner!
