Milk Chocolate with Brownie Crumbs and Raspberries

A really luxurious chocolate mousse made with milk chocolate. Use crispy cookies to crumble over the mousse and finish with sweet-sour raspberries on top.

Instructions

Step 1
  • Break the chocolate into pieces and melt it in the microwave or over a water bath.
Step 2
  • Whisk the egg yolks and sugar together and vigorously stir in the melted chocolate. Whisk the buttermilk and stir into the chocolate mixture.
Step 3
  • Pour it into ovenproof individual dishes. Leave to stand for at least 1 hour in the refrigerator.
Step 4
  • Divide the cookies into pieces and sprinkle over the mousse. Garnish with raspberries.
