Minestrone

Delicious hot minestrone soup to enjoy with a soft crisp bread.

Ingredients

Bacon In Slices
100 g
Olive oil
1 tbsp
Small Finely Choppd garlic clove

Coarsely Chopped yellow onions

Celeriac In Smaller Pieces
Leeks In Rings

Carrots In Slanted Slices

Can Of chopped tomato

Vegetable stock
1¾ litre
Small Sprigs Of Fresh thyme

Coarse salt
1 tsp
Freshly pepper
Dried Whole Grain pasta

Additions

Cream cheese
50 g
Milk
1 tbsp
Coarse salt
tsp
Freshly pepper
Thick Slices Of Coarse Stale Bread

Instructions

Step 1

  • Cut the bacon slices into strips and fry them in a pan for approximately 3 minutes.

Step 2

  • Add oil, garlic, onion, celery, leeks and carrots and fry for about another 2 minutes. Then add the tomatoes, stock, thyme, salt and pepper to the pan and bring the soup to the boil.

Step 3

  • Add the pasta and let the soup simmer until the pasta is tender for approximately 10 minutes. Taste.

Step 4

  • Mix the cheese, milk, salt and pepper together and spread onto lightly toasted bread. Put under the grill and grill until the cheese is golden. Grill for 5 minutes.
