One-pot Penne Pasta

Throw everything in a pot with this easy-peasy recipe to make with the little ones. They can help with stirring and seasoning until you have a delicious dinner the whole family will love.

Ingredients

Olive oil
1 tbsp
Large white onion, finely chopped

Tbsp garlic paste

Sliced button mushrooms
250 g
Large carrot, grated
1
Celery sticks, finely diced
2
Vegetable stock cube
100 ml
Water
400 ml
Can chopped tomatoes
400 g
Penne pasta
250 g
Grated cheese
60 g

Instructions

Step 1

  • Heat a large pan over a medium heat and drizzle with oil. Gently fry the onions until they’re soft

Step 2

  • Add the garlic, mushrooms, carrot, and celery, then continue to cook until everything has softened. Season with salt and pepper.

Step 3

  • Make up the vegetable stock with a mix of the water and Big Milk.

Step 4

  • Add the can of chopped tomatoes and the vegetable stock to the pan and bring everything to a boil.

Step 5

  • Tip in the pasta and leave to simmer for 10-12 minutes, checking it occasionally to give it a good stir.

Step 6

  • Once the pasta is cooked and the sauce has thickened, take it off the heat and stir in the grated cheese.

Step 7

  • Serve with a little more cheese on top and enjoy!

Top Tip

You can use grated cheddar or grated mozzarella in this dish (mozzarella will add a lovely stringy cheese texture!).
