Ingredients

Peanut butter granola bars:

Frozen blueberries or 70 g dried blueberries
250 g
Rolled oats
4 dl
Rice krispies
3 dl
Coconut flakes
1½ dl
Pecan nuts, chopped
1 dl
Chia seeds
2 tsp
Vanilla sugar
2 tsp
Peanut butter
200 ml
Maple syrup
100 ml

Yoghurt drizzle:

Butter
1 tbsp
Turkish yoghurt
75 ml
Icing sugar
2 tbsp

Instructions

Peanut butter granola bars:

  • If using frozen blueberries, preheat the oven to 150°C (convection). 
  • Pour the blueberries onto a lined baking sheet and dry them in the middle of the oven for about 30 minutes. Check on them to make sure they do not burn.
  • Mix all dry ingredients in a bowl.
  • Heat the peanut butter and maple syrup in a small saucepan, stirring constantly. Let it cool and then mix it with the dry ingredients and the dried blueberries.
  • Place a piece of parchment paper in a 20x20 cm baking pan. Press the mixture with damp hands. Place it in the freezer for about 30 minutes.

Yoghurt drizzle:

  • Brown the butter in a small saucepan while whisking until it is golden brown and smells nutty. Pour it into a bowl and let it cool. Whisk in the yoghurt and icing sugar.
  • Drizzle the yoghurt mixture over the frozen peanut butter granola bars. Cut into 16 pieces.
