Pork tenderloin casserole:

Butter

Trimmed pork tenderloin (approx. 400 g), diced into small chunks

Instructions

  • Let the butter melt at high heat in a large, heavy-bottomed saucepan but make sure it does not begin to brown. Sear the tenderloin chunks and bacon cubes at high heat for about 3 minutes.
  • Add mushrooms and onion wedges and cook for 3 more minutes at medium heat.
  • Add peeled tomatoes, salt, and paprika and let the dish cook at low heat with the lid on for about 10 minutes.
  • Add cocktail sausages and cream to the pork casserole, heat it through, and season it to taste.
  • Garnish it with flat-leaf parsley and serve it with freshly boiled rice.
