Potato Salad with Horseradish Dressing

Creamy potato salad with edamame beans and a horseradish and honey dressing. Delicious side for smoked salmon, mackerel or smoked meat.

Ingredients

2 Red onions (In Half Slices)
1 tsp Coarse salt

Potatoe salad

1 kilo Boiled potatoes Chunks
300 g Thawed Edamame beans (Soybeans)
20 g Shredded Broad-leaved fresh parsley

Horseradish Dressing

400 ml Creme fraiche
2 tbsp Fine-Grained horseradish
1 tbsp Honey
tsp Coarse salt

Instructions

Step 1

  • Mix the onions with salt and let the mixture dry for approximately 5 minutes. Rinse the onions and drain them of moisture.

Step 2

  • Stir crème fraîche, horseradish, honey and salt together.

Step 3

  • Mix the dressing with the potatoes, edamame beans, onions and parsley (keep some beans, onions and parsley to garnish). Add water if the potato salad if it is too firm.
