Crush the macaroons and place them in individual glass bowls.
Step 3
Remove some of the raspberries and pour the rest over the macaroons. The macaroons and raspberries must now stand to allow the macaroons to "soak up" some of the rasberries.
Step 4
Take the soaked gelatine out of the water and melt over a water bath.
Step 5
Whip the cream until light and creamy and add in the sugar. Then add in the melted gelatine and the sherry.
Step 6
Spoon the cream mixture over the raspberries and macaroons. Serve this dessert cold and decorated with whole raspberries.
