Instructions

Pickled vegetables
  • Bring water and salt to a boil in a pot and cook the carrots and cauliflower for about 5 minutes.
  • Add courgettes and cook for an additional 1 minute.
  • Drain the vegetables well in a sieve.
Brine
  • Boil the ingredients for the brine (except the cornflour, water, and sodium benzoate) for about 3 minutes.
  • Mix cornflour and water into a slurry and stir it into the brine.
  • Reduce the heat and cook the brine for about 1 minute.
  • Add sodium benzoate and remove the peppercorns.
Pickles
  • Mix the drained vegetables into the hot brine.
  • Season to taste and divide the finished pickles into sterilised jars.
  • Cover and place your pickles in the fridge.
Mayonnaise
  • Beat the egg yolks well with salt, lemon juice, and 1 tablespoon of oil.
  • Gradually whisk in the rest of the oil in a thin stream.
  • Season to taste and place the mayonnaise covered in the fridge.
Remoulade
  • Blend or finely chop your pickles and mix them with the mayonnaise – 300 g chopped pickles to 100 g mayonnaise.
