Roasted Potato Salad

This salad gets more colour and taste using roast potatoes and is great to use for everyday and special occasions.

Instructions

Step 1
  • Heat the oven to 225 °C. Chop the potatoes and put into an ovenproof pan. Mix in the butter and sprinkle with salt. Roast in the middle of the oven for about 30 minutes.
Step 2
  • Shred the spring onions. Mix the dressing - yogurt, mixed herbs & salt. Let the potatoes cool. Mix the potatoes with the spring onions and rocket & put in a serving bowl.
Step 3
  • Pour over the yogurt dressing.
