Roasted Root Vegetables

A hotter version of our Swedish root vegetables.

Ingredients

Mixed root vegetables (such as potatoes, carrots, parsnip, and celeriac)
800 g
Ground cumin
1½ tsp
Chilli powder
1 tsp
Butter
2 tbsp
Salt
1 tsp
Creme fraiche with paprika and chilli
200 ml

Instructions

Step 1

  • Heat the oven to 225 °. Wash and cut up the potatoes. Peel the root vegetables and cut them into pieces.

Step 2

  • Mix everything together and place on a baking tray. Fry the cumin seeds and chilli pepper in the butter in a small saucepan.

Step 3

  • Stir in the salt and pour over the potatoes and root vegetables, mixing thoroughly together. Roast in the middle of the oven for about 30 minutes.
