Saffron Pancake

Saffron Pancake

A wonderful pancake with the delicious taste of saffron. Serve it with jam and cream.

Ingredients

Milk
1 litre
Butter
1 tbsp
Warm or cold oatmeal porridge
120 g
Cinnamon stick
1
Salt
½ tsp
Eggs
2
Whipped cream
300 ml
Caster sugar
1 tbsp
Saffron
½ g
Raisins
40 g
Jam

Instructions

Step 1

  • Melt the butter in a saucepan. Add the porridge, salt and about 375ml milk. Bring to the boil stirring and then lower the heat and add the rest of the milk, keeping stirring for a little while.

Step 2

  • Add the cinnamon stick. Allow the mixture simmer on a low heat for about 40 minutes. Stir every now and then. Take care not to allow it to boil over. Leave to cool.

Step 3

  • Heat the oven to 200 °. Whisk the eggs, 100 ml whipped cream, sugar and saffron together, adding it into the porridge mixture along with the raisins.

Step 4

  • Stir well and pour the mixture into a greased ovenproof dish. Bake in the middle of the oven for about 30 minutes. Serve with whipped cream and jam.
