Semolina with Passion Fruit

This dish is good as a dessert. Prepare the evening before and serve with a wonderful fruit mash of pears and passion fruit.

Instructions

Step 1
  • Boil the milk, vanilla sugar and salt in a saucepan. Add in the semolina and cook on low heat, while stirring, for about 4 minutes.
Step 2
  • Beat the mixture until airy and smooth - this is easiest with an electric whisk. Pour into individual bowls and leave to stand in the fridge, preferably overnight.
Step 3
  • Peel and core the pears, cut into pieces. Cook them gently in the juice in a small saucepan, for about 10 minutes.
Step 4
  • Mix into a mash. Scoop out the passion fruit pulp with a spoon and add to the pears. Leave to cool and store in a refrigerator.
Step 5
  • Serve the chilled semolina with the fruit mash.
