Instructions

Strawberry ice cream
  • Beat egg yolks and sugar light and fluffy for approx. 2 minutes.
  • Bring the cream to a boil in a small heavy-bottomed saucepan with the split vanilla pod.
  • Remove the pan from the heat and add the egg mixture to the hot cream while whisking.
  • Heat the cream to just below boiling point at medium heat for approx. 2 minutes – keep whisking until the cream starts to thicken. Do not let it boil.
  • Strain the ice cream and let it cool.
  • Blend strawberries, sugar, and lime juice to a smooth puree. Fold the puree into the ice cream.
  • Pour the mixture into a mould (approx. 1 litre) and put it in the freezer, covered. Stir the ice cream 4-5 times during freezing.
Lime sugar
  • Mix sugar and lime zest together in a small bowl.
  • Sprinkle the lime sugar over the strawberry ice cream when serving.
