Pork tenderloin

Butter
25 g
Trimmed pork tenderloin (approx. 475 g)

Instructions

Creamy scalloped potatoes

  • Peel the potatoes and cut them into thin slices.
  • Layer the potatoes with nutmeg, salt, and pepper in a greased, ovenproof dish (approx. 20x28 cm).
  • Pour the double cream on top and bake the potatoes at the bottom of the oven for about 1 hour at 175°C.

Pork tenderloin

  • Melt butter in a pan until golden. Brown the tenderloin on all sides at medium to high heat for approx. 4 minutes total.
  • Cut a slit down the middle of the tenderloin, approx. 2 cm deep. Spread it out to the sides and sprinkle with salt. Place the tenderloin in an ovenproof dish.
  • Cut the bacon into small strips and fry them in the pan over medium heat for approx. 2 minutes, stirring. Add onions, hazelnuts, garlic, thyme, and salt and fry for an additional 2 minutes.
  • Put the bacon mixture in the slit in the roast and place it at the top of the oven for about 15 minutes at 175°C.

For serving

  • Serve the stuffed pork tenderloin whole with creamy scalloped potatoes and green salad, cutting the roast into thick slices at the table.

Tips

Pork tenderloin is a thin narrow, delicate cut of meat that comes from the muscle that runs along the backbone. When buying the meat, make sure it has a glossy pink exterior without any discolouration. Take a look at the silver skin, too; in other words, the thin membrane on and around the tenderloin. Choose one without too much silver skin and make sure to remove it before cooking.

The pork should only be cooked for a short time to keep it juicy and prevent it from drying out. The tenderloin is slightly pink and juicy after 15 minutes in the oven. If you want it well done, keep it in the oven for 5 more minutes. Note that the exact cooking time may vary depending on the size of the tenderloin. If you are in doubt, you can use a thermometer and remove the pork from the oven once it reaches around 63°C.
